Bakso or meatball is the kind of a meat commonly found in Indonesian food. Bakso sangat populer dan dapat ditemukan di seluruh Indonesia; dari gerobak pedagang kaki lima hingga restoran besar. Berbagai jenis bakso sekarang banyak ditawarkan dalam bentuk makanan beku yang dijual di pasar swalayan ataupun mal-mal. Irisan bakso dapat juga dijadikan pelengkap jenis makanan lain seperti mi goreng, nasi goreng, atau cap cai.

Bakso memiliki akar dari seni kuliner Tionghoa Indonesia. Hal ini ditunjukkan dari istilah 'bakso' berasal dari kata Bak-So, dalam Bahasa Hokkien yang secara harfiah berarti 'daging giling'. Bakso China biasanya terbuat dari babi atau makanan laut dan warnya agak kecokelatan serta bentuknya tidak bulat sekali. Sedangkan bakso Malang dan Solo terbuat dari daging sapi, berwarna abu abu dan bentuknya bulat sekali. Bakso China biasanya tidak disajikan dengan kuah melimpah berbeda dengan bakso Malang dan Solo yang disajikan dengan kuah melimpah.

Dalam proses pembuatannya, ada bakso yang dicampur dengan boraks atau bleng untuk membuat tepung menjadi lebih kenyal mirip daging serta lebih awet.[2] Hal ini membuat bakso pernah dianggap makanan yang kurang aman oleh BPOM. Karena bakso terbuat dari daging, maka sebaiknya bakso disimpan dalam kondisi beku sebelum direbus untuk dikonsumsi. Karena alasan itulah di supermarket bakso dijual dalam kondisi beku untuk menjaga temperatur agar bakso dapat terjaga kualitasnya dan tidak tercemar bakteri. Konsumen perlu berhati-hati dalam memilih bakso yang dijual oleh pedagang bakso keliling. Bakso yang dijual tetapi dipajang di etalase pada temperatur ruang rawan tercemar bakteri, misalnya bakteri penyebab diare atau salmonela penyebab tifus. Pilihlah bakso yang tengah direbus.
