High Protein Salad....Morogo/iMfino/Pigweed
Perfect for Vegans/Vegatarians, looking for some extra Protein..
All the ingredients fresh organic from the garden, lettuce, spring onion, chives, basil, purslane, mint, morogo, thyme and oregano......
We pick the stems of the Morogo/imfino Plant, that grows pretty much everywhere in zululand. we then seperate the seeds/flowers from the stems.
and sprinkle it over the salad
These stems could also be used again in a stir fry or chopped up in a stew...
Seen here, one popped up in my garden not so long ago. Commonly known as pigweed, this plant has a high protein count, especially in the flower/seeds.
The plant leaves, flowers and seeds are used in a traditional dish called by the same name "imfino", which mainly consists of maize porridge, the leaves, flowers and seeds of the imfino plant, also know as Zulu Spinach locally, to this some corn and a variety of other ingredients could be added.
a little info from SteadyHealth.com
Morogo, a type of leafy Amaranth, is one of the world’s oldest food crops. Commonly considered a weed, it has been planted and grown by low-income groups in South America, Asia and Africa for centuries, and is now regarded as a superfood.
Morogo, a traditional African food plant of the Amaranth family, is a spinach-type leafy plant that is packed with nutrients. Also known as pigweed (and sometimes spelled Marogo), it is rich in protein and contains minerals (including iron and calcium), vitamins A and C, and trace elements.
While not a common vegetable on supermarkets shelves, according to Phakamani Xaba from Kirstenbosch National Botanical Garden’s South African National Biodiversity Institute (SANBI), there is some large-scale commercial cultivation of several types of Amaranth which is mostly exported to first world countries as “a high-demand health food.”

thank you, unfortunately I'm not currently on Discord I did try using it once, but was lagging and cutting out, I think once we are on a bit faster internet, I will attempt it again. Thankfully the area is being upgraded to fiber optics as the copper infrastructure is shot.
I also like herbs and test new herbs: I will look for Morogo/imfino, purslane. Great post too :)
