Kue Apem, Kue Tradisional yang Masih Bertahan Di Antara Kue-Kue Modern / Apem Cakes That Still Survive Among Modern Cakes
Selamat malam teman-teman Steemian, malam telah datang, siang telah berlalu. Suasana malan yang sejuk setelah bumi Bogor diguyur oleh hujan. Sepertinya enak ngemil kue-kue sambil menonton acara di televisi.
Banyak sekali yang membuat dan menjual kue-kue modern, warna, bentuk dan rasanya sangat menggugah selera. Meskipun begitu, penggemar kue-kue basah tradisional Indonesia tetap mencari keberadaan kue-kue tradisional yang sudah mulai jarang dijual di toko-toko kue. Di tengah-tengah maraknya kehadiran kue-kue baru zaman now, kue-kue jadul (jaman dulu) tetap dicari penggemarnya.
Pilihan saya pada postingan kali ini adalah kue basah tradisional Indonesia yang manis, empuk dan enak yaitu kue apem. Kue apem yang saya tahu di sini adalah kue yang terbuat dari tepung beras, dikukus dan disajikan dengan taburan kelapa parut. Cocok dinikmati di pagi hari, sore hari atau setelah turun hujan dengan secangkir teh hangat atau kopi. Meskipum pada umumnya kue apem terbuat dari bahan dasar tepung beras, tetapi kue apem juga bisa dibuat dari tepung terigu dengan tetap memakai ragi.
Resep kue apem yang legit dan enak adalah sebagai berikut :

Kue apem bertabur kelapa parut
Bahan-bahan :
- Tepung gandum/tepung terigu 1 kilogram
- Ragi instan 7 gram
- Gula merah 150 gram
- Gula pasir 2 sendok makan
- Garam 1 swndok teh
- Air hangat secukupnya
Bahan Untuk Taburan :
- Kelapa parut muda 1/2 butir
- Garam halus 1 sendok teh
Cara Membuat :
Siapkan wadah. Campurkan ragi instan dengan tepung gandum/tepung terigu, gula pasir dan garam. Aduk hingga rata.
Larutkan gula merah dengan air hangat. Aduk hingga benar-benar larut. Sisihkan.
Masukkan gula merah yang sudah dicairkan ke adonan tepung, sedikit demi sedikit sambil di aduk hingga rata. Kalau air gula merahnya sudah habis tambahkan air hangat lagi ke dalam adonan sedikit demi sedikit sampai tekstur adonannya menjadi agak cair.
Siapkan dua buah loyang bulat yang berlubang di bagian tengahnya.
Tuang adonan ke dalam loyang berlubang yang sudah diolesi dengan minyak goreng. - - Diamkan dan tutup dengan kain lap bersih / serbet, biarkan hingga adonannya naik/mengembang.
Sambil menunggu adonan kue apem naik, kukus bahan taburan sekitar 15 menit, angkat dan sisihkan.
Setelah adonannya naik/mengembang, kukus kue apem hingga matang kira-kira 25 menit.Lakukan tes tusuk dengan garpu untuk memastikan kematangan kue apem.

Angkat, keluarkan kue apem dari loyang.
Biarkan dingin dan potong-potong sesuai selera.
Sajikan kue apem bersama taburan kelapa parut yang sudah dikukus tadi.

Tips :
- Kue apem bisa divariasikan warnanya dengan cara mengganti gula merah dengan gula pasir dan pewarna makanan, misalnya warna pink atau hijau.
- Tepung terigu bisa diganti dengan tepung beras.

My choice in this post is the sweet, tender and tasty traditional Indonesian cake, which is apem cake. The apem cake that I know here is a cake made from rice flour, steamed and served with a sprinkling of grated coconut. Suitable to enjoy in the morning, evening or after rain with a cup of hot tea or coffee. Even though in general apem cakes are made from rice flour, but apem cakes can also be made from wheat flour by still using yeast.
Apem recipes that are legit and delicious are as follows :

Apem cake sprinkled with grated coconut
Ingredients :
- Wheat flour / 1 kilogram flour
- 7 gram instant yeast
- 150 grams of brown sugar
- 2 tablespoons of sugar
- 1 cup of salt
- Sufficiently warm water
Sprinkling Ingredients :
- 1/2 grated young coconut
- 1 teaspoon of fine salt
How to make :
Prepare the container. Combine instant yeast with wheat flour, sugar and salt. Mix well.
Dissolve brown sugar with warm water. Stir until completely dissolved. Set aside.
Put the melted brown sugar into the flour mixture, little by little while stirring until blended. If the brown sugar water has finished, add warm water again into the mixture little by little, until the texture of the batter becomes a little liquid.
Prepare two round pans with holes in the middle.
Pour the mixture into a hollow pan that has been smeared with cooking oil.
Let it stand and cover with a clean washcloth / napkin, leave it until the mixture rises / expands.
While waiting for the apem cake mixture to rise, steam the sprinkling ingredients for about 15 minutes, remove and set aside.
After the mixture rises / expands, steam the apem cake until it is cooked for about 25 minutes. Do a puncture test with a fork to ensure the maturity of the cake.

Lift, remove the apem cake from the baking sheet.
Let it cool and cut it according to taste.
Serve an apem cake with a sprinkling of grated coconut that has been steamed.

Tips :
- Apem cakes can be varied in color by replacing brown sugar with sugar and food coloring, for example pink or green.
- Wheat flour can be replaced with rice flour.
