Recipe of the Day, Week No. 54: (Coconut Jollof Rice)

Before I proceed, I would love to thank @mvchacin, for organizing this beautiful contest to share my recipe and also the noble community @steemit-ironchef; it's an honor to be among the participants. Let's dive in!
I have waited for the perfect contest to share this recipe and I guess this is it. I will be using this dynamic to share my recipe.
I started by breaking the coconuts so I could extract the milk; I then washed the coconuts before I grated them and sieved the milk.

Coconut jollof rice is a delicious and flavorful West African dish! Below is the step-by-step guide to preparing coconut jollof rice with vegetables:
Ingredients
- 3 cups uncooked long-grain rice
- 3 cups coconut milk
- 2 cups water
- Vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- Salt and black pepper, to taste
- Seasoning cubes, to taste
- mixed vegetables (e.g., carrots, bell peppers and green beans)
- 2 Scotch bonnet peppers, chopped
- Fresh tomatoes
Cooking instructions
- I start by rinsing and preparing the rice in a fine-mesh sieve until the water runs clear. Drain and set aside.
- turned on my gas cooker, placed a saucepan on top, and heated oil and sauté onions in a large saucepan over medium heat. Add the chopped onion and tomatoes, and sauté until translucent.
Add the spices, minced garlic, grated ginger, salt, and black pepper. Stir well and cook for 1-2 minutes.
I then added the mixed vegetables and stir well. I Cook for 3-4 minutes or until they start to soften.
Before I then, Pour in the coconut milk and water and stir well.
Add the rinsed rice to the saucepan and stir well to mix or combine perfectly.
Allow the mixture to boil, and simmer until the rice is cooked and the liquid has been absorbed.
Serve hot and enjoy with my boiled egg and cabbage (salad)
