Paleo : No Rice Nori Wraps
Have you ever tried making sushi rolls at home?
I've tried a handful of times and always found the rice bit challenging.
Between getting the consistency right, the extreme stickiness of the rice (despite having a rice wine water bowl to wet my fingers with) and getting the ratios correct so the roll wouldn't be too full, it was always a toughie for me.
So when we watched The Paleo Way the other day and saw Pete's kids do their own no rice sushi roll I was instantly inspired to create my own version with what we had on hand.
No Rice Nori Rolls
Prep. 10 mins | Cook. 5 mins
Assemble. 2 mins
Serves 5
Ingredients
1 Celery stalk
Half a large Carrot
Half a Cucumber
Half an Avocado
3 Spring Onions
3 Parsley stalks
3 Salmon steaks
All Purpose seasoning
1 tablespoon extra virgin olive oil
Nori/Seaweed Wraps
Dressing
Honey Mustard
Apple Cider Vinegar
Lemon
Salt & Pepper
Method
Slice all the veggies so they're roughly the same length.
In a small bowl add honey mustard, apple cider vinegar, lemon and salt & pepper to desired taste and consistency.
Coat salmon steaks with all purpose seasoning and salt and pepper.
Heat olive oil in a pan.
Fry salmon steaks until it's cooked to your liking.
Rest salmon for a few minutes then cut into smaller sizes.
Begin assembly!
Notes & Thoughts
We only had 5 sheets of nori left thus the "serves 5" and half quantities. Which ended up being perfect for lunch.
Surprisingly I didn't miss the rice at all! I actually really enjoyed it the way it was because of all the fresh veggies and the dressing.
Another paleo change to this was the salmon. Instead of adding flour to the all purpose seasoning (as was my custom whenever I made these salmon steaks) I just kept it simple and left it out.
Overall I think it was a success. Well, hubby certainly liked it. He had the honour of having the last roll and so far we're both enjoying our paleo journey.
Are you on a similar lifestyle/diet change? If so, which one are you trying? I read Keto allowed dairy, but after watching 'What The Health' on Netflix I gotta say I'm turned off dairy... and a lot of things..

Using the nori wraps is a pretty good alternative if you're trying to avoid bread and grains in general. Sky's the limit with the fillings ;)
