ihaw-ihaw
Ihaw-ihaw is a famous Filipino street food. "Ihaw" literally means grill. Specific meats are being skewed on bamboo sticks, grilled and can be sold in retail. Foreigners find this food exotic because the meats used here are not usually seen as a delicacy. Some "ihaw-ihaw" options are pork ears, chicken intestine, pork intestine aka isaw, pork colon aka batikolon, pork/chicken liver, chicken feet aka adidas, chicken head aka helmet, chicken kidneys aka butchi, pork/ chicken blood aka betamax, chicken gizzard aka "bato-bato*. Often these meat parts are neglected. But Filipinos are known to be frugal people and we don't like wasting food. From this concern, the idea of *ihaw-ihaw uproots. Then, it became a household business and later on a famous street food. Aside from this exotic meat parts, there are also common meat options like pork meat or bbq and hotdogs.
Ihaw-ihaw is paired with two kinds of dips. Barbeque sauce and vinegar sauce. You can eat your ordered ihaw-ihaw right on the spot or have a take home. My favorite among the list is the adidas and pork ears.
