I Just Cooked 2-Month Old Plums!

"But Binky, how is that possible? Won't they be spoiled?"

Not if they've been sitting in alcohol all this time :p

So I had plums sitting in some alcohol in order to make Plum Cordial. I forget if I used White Rum or Vodka. Either way, I was straining the fruit out of the alcohol today and adding the sweetener to the mix. I added about 1/3 Cup of Maple Syrup. Now the Cordial has to sit for a good month or so before it's actually ready.

The plums were full of alcohol and were way too strong to eat just like that, but they're still good, since they've been preserved all this time in the alcohol, while the alcohol itself was being imbued with their flavour. They're those oval blueish plums from Toronto, you see. Those are good.

Anyway, it seemed like such a waste to throw them out. So I cooked them, adding some organic cane sugar to them, several table spoons, they softened up and some of the alcohol evaporated, naturally, but they still retain a bit of the potency from the alcohol in a much more mild way. They taste delicious actually :p
