Friday Night Eats! | The Birds are Smokin!

The Bird’s have been crazy busy this week!

We’ve been planning to have a little flock over for dinner for some time. You know how that is, a lot of planning, prepping, cleaning and of course cooking!


Well guess what, we held this little shindig on Friday night!


The menu is always so hard to decide on don't you agree? I always want to satisfy everyone which means I end up cooking way too much food! I thought we would have a couple different choices and a bunch of side dishes. With dessert the challenge was…how many?


Mr. Bird had a great idea…


how about smoked Salmon? I’ll share the nitty gritty details about smoking another day, but suffice it to say, we spent the majority of the week “experimenting”. By the time Friday rolled around I was so done with Hickory, Mesquite and Apple Wood. If you have done any smoking you would understand. I mean, enough of a good thing right? Time for a good cleaning of the tail feathers!

Thursday night…


was the night. Time to brine the salmon. We packed the fish in a brine of 2 cups Brown Sugar, ½ cup Sea Salt and 1 tablespoon Black Pepper. Let it rest overnight and then wash the brine away. Now onto drying racks to dry and form a film called a Pellicle around the fish. Note the little fan, very handy in fish drying. 2 hours later we were smokin away.

Meanwhile…


I’m making side dishes like a bird building a nest! I whipped up fresh Potato Salad, Deviled Eggs, and of course Artichoke Salad.

Kiwi…


Fruit cups were a nice last minute addition. Pineapple, blueberries, strawberries and kiwi, yum!

Fast forward…


6 hours the fish was perfect! The guests wouldn’t arrive for a couple of hours so I finished fluffing up around nest, Mr. Bird had just enough time to mop the kitchen floor! Such a sweet bird he is!

Light the candles and turn on the music…

Our work was done! Time to sit down and enjoy friends.

What a fun Friday Night! Dinner was a hit, everyone loved the Smoked Salmon. The dishes are done and hopefully I’m just in time for @foodfightfriday! It’s week 34 my friends, join us! Thanks so much to my #fff foodie friends and another great week of @foodfightfriday!

BUT being a Kiwi, no not the fruit, but a person from New Zealand I have to say

or what us from NZ call oursleves,
that fruit was originally called Chinese Gooseberry, and grows really well in New Zealand so they started marketing it as Kiwi Fruit, and thats what we all call it now, Unfortunately as it moved around the world some thought the Fruit was extra and not needed so dropped it from the name

I know about that flightless bird since elementary school though never have encountered any 😂 and I wonder why than people named the chinese gooseberry as Kiwi Fruit. I think its colour and feathered (velvet) skin made so.. or simply because NZ is produces most kiwi fruits for the world😆. Im in!

There is not to many of them left and there are rare to see in nature these days as they are nocturnal, most people will only ever see them in an aviary or Kiwi house
I think they names it that as it does kind if resemble a kiwi bird and to identify it was grown in NZ

Now that looks like one heck of a tasty dish. What a genius idea to add other fruit into the hollow kiwi. I am sure it was delicious. And, you really can't go wrong with the salad and salmon. It seems like you had an amazing night.

Dude… these salmon fillets look like candy. Why can’t we live closer to you. The entire meal looks like a treat. I bet your guests were thoroughly impressed. The fruit cups are cute too 😉. How are you gonna enter the food fight Friday ring on a Saturday? Girl, you crazy! Haha… you salmon smokin maniac. I love this post.

Oohhh no @puravidaville 😉 you need to think about having treats for your diet 😂 but.. I think Mrs Birds would love to have all the chef of foodfightfriday around... because we will swallow up everything in minutes😂

I know, she is such a Chef! Everything that comes out of her kitchen I want to devoure. 😋

Oohhh.. I love to be one of the Bird's guest just to have that dessert😍 i might get one slice of smoked salmon but you need to hide all the dessert for other guests 😂.. you're so lucky because you don't have me around Mrs @birdsinparadise 😏
