👉 Eggplant Antipasto.
Delicious, easy, economical to prepare, your guests are sure to lick their fingers when they try the delicious Eggplant Antipasto with toast or cookies. I share the recipe with you.
INGREDIENTS
- 2 Eggplants.
- 1 red paprika.
- Oil.
- Vinegar.
- Salt.
- Cilantro.
- 2 garlic cloves.
- A pinch of oregano.
PREPARATION
- Wash and chop the eggplants lengthwise. Then cut them into strips, if they are too long, cut them in half. Add salt. Set aside.
- Wash and chop lengthwise the red pepper.
- Spread oil with a napkin and heat the frying pan to roast the eggplants until they are golden. Set aside the roasted eggplants.
- Do the same procedure with the red pepper.
- Then chop the coriander, crush the two cloves of garlic well.
- In a cup add oil, vinegar, salt, chopped coriander, crushed garlic and a pinch of oregano. Stir well.
- Then join the eggplant and red paprika in a bowl.
- Add the vinaigrette, rectify as it is of salt. Stir for all the flavors to come together.
