👉 Eggplant Antipasto.

Delicious, easy, economical to prepare, your guests are sure to lick their fingers when they try the delicious Eggplant Antipasto with toast or cookies. I share the recipe with you.

INGREDIENTS

  • 2 Eggplants.
  • 1 red paprika.
  • Oil.
  • Vinegar.
  • Salt.
  • Cilantro.
  • 2 garlic cloves.
  • A pinch of oregano.


PREPARATION

  • Wash and chop the eggplants lengthwise. Then cut them into strips, if they are too long, cut them in half. Add salt. Set aside.
  • Wash and chop lengthwise the red pepper.
  • Spread oil with a napkin and heat the frying pan to roast the eggplants until they are golden. Set aside the roasted eggplants.
  • Do the same procedure with the red pepper.



  • Then chop the coriander, crush the two cloves of garlic well.
  • In a cup add oil, vinegar, salt, chopped coriander, crushed garlic and a pinch of oregano. Stir well.



  • Then join the eggplant and red paprika in a bowl.




  • Add the vinaigrette, rectify as it is of salt. Stir for all the flavors to come together.
