Zander in a creamy sauce with mushrooms

Let's continue the fish-theme and will cook a very delicious zander in a creamy sauce.

Ingredients:
- Zander fillet, 360 gr.
- Onion, 1/2 of the onion
- Mushrooms, 2-3 PCs.
- Cream, 20%, 200 ml
- Garlic, 2-3 cloves
- Thyme
- Oregano, a pinch
- Black pepper, vegetable oil, salt
Separate the thyme leaves from the stems (leave a twig to serve). Peel the onion and cut it in half rings, slice the mushrooms and chop the garlic finely.
Heat a little vegetable oil on the pan and fry the onion and garlic over medium heat for two minutes.
Add the mushrooms and fry for three minutes.
Add the cream (if you have cream less than 20% fat, add a pinch of flour), oregano and thyme. Salt and pepper to taste, mix and almost bring to a boil.
Cut the fish into portions, put it in a pan, pour the sauce over it, cover it with a lid and simmer for ten minutes on a low heat.
Serve with thyme.
