Mie Aceh, adalah masakan asli Aceh yang menjadi salah satu kuliner Indonesia. Mie Aceh dibuat dengan menggunakan bumbu halus yang sudah diracik tergantung selera masing - masing orang.

Saat air mulai mendidih ataupun ketika sayuran, daging ataupun seafood sudah mulai matang barulah kemudian mie kuning dimasukkan sekalian ditaruh kecap dan saus kemudian diaduk dan ditutup menggunakan wadah penutup beberapa menit.

Setelah menunggu beberapa menit wadah penutup tersebut dibuka dan diaduk kembali hingga bumbu dirasa sudah meresap kedalam mie kuning barulah Mie Aceh tersebut dimasukkan kedalam piring sekalian ditambahkan bawang goreng, irisan mentimun dan emping untuk kemudian mie tersebut dihidangkan.

Demikianlah lebih kurangnya proses pembuatan Mie Aceh yang sudah diakui sebagai salah satu kuliner Indonesia.
