POTATO BREAD

Material:
A.

  • 400 gr high protein flour (komachi / chakra)
  • 40 gr of milk powder
  • 75 gr sugar
  • 6 grams of instant yeast
  • 1 egg yolk
  • 1 egg
  • 100 ml of water
    B.
  • 200 gr steamed potatoes
  • 75 gr unsalted butter
  • 6 grams of salt
    .
    Way:
  1. Knead ingredient A in the bowl until half smooth, add ingredient B. Knead until smooth.
  2. Rest the dough for 30 minutes.
  3. Deflate the dough, divide the dough @ 40gr, round it.
  4. Roll the dough, fill with enough filling. Wrap tightly, then arrange on a baking sheet.
  5. Proofing the dough again until it expands 2x (60-90 minutes)
  6. Apply with evaporated milk & egg yolk, topping according to taste.
  7. Oven temperature of 190 C for 15-18 minutes until browned.
