POTATO BREAD
Material:
A.
- 400 gr high protein flour (komachi / chakra)
- 40 gr of milk powder
- 75 gr sugar
- 6 grams of instant yeast
- 1 egg yolk
- 1 egg
- 100 ml of water
B. - 200 gr steamed potatoes
- 75 gr unsalted butter
- 6 grams of salt

Way:
- Knead ingredient A in the bowl until half smooth, add ingredient B. Knead until smooth.
- Rest the dough for 30 minutes.
- Deflate the dough, divide the dough @ 40gr, round it.
- Roll the dough, fill with enough filling. Wrap tightly, then arrange on a baking sheet.
- Proofing the dough again until it expands 2x (60-90 minutes)
- Apply with evaporated milk & egg yolk, topping according to taste.
- Oven temperature of 190 C for 15-18 minutes until browned.
