Asparagus Soup and Zucchini,Carrot,Cucumber Salad
Today was Costco day. What does that mean? It means my in-laws go shopping and I can more comfortably use the kitchen while they're gone. I may be stuck here for a long time since the state of the world is uncertain, so I have to learn how to move around stealthily.
I never know how long it will take them so I have to make it snappy. With the random things that we ordered that were in the fridge, I made soup and salad. We had asparagus that had to be used. I don't eat asparagus much but now and then I do.
Quick cream of asparagus soup
- 1 bunch asparagus
- 1 carrot
- 1 cup broccoli
- 1 onion
- 3 cloves garlic
- 1 medium potato
- Half cup parsley
- half cup plant based milk (I used soy)
- salt to taste
- 4 cups veggie broth
- 2 bay leaves
Save the tips of the asparagus and add to the soup at the end
Boil until the potatoes and carrots are cooked
Puree all of the ingredients in the pot
(This is usually when I add soy milk)
Add the asparagus tips and leave until a little tender but still has color.
While the soup is cooking it was time to make the salad.
Zucchini carrot and cucumber salad
- 1 large zucchini
- 1 carrot
- 1 English cucumber
- 1/4 cup diced red onion
- 2 diced tomatoes
- 1/4 cup walnuts
- 1/4 cup sunflower seeds
1 cup vinaigrette -1/cup lemon juice 1/4 cup white balsamic,1 teaspoon salt. pepper,1 teaspoon minced garlic(I used garlic from a jar)
1/4 cup olive oil (I haven't been using oil lately but I caved in)
Shred the carrots cucumber zucchini
Drain them in a colander for twenty minutes for best results ( I didn't because time was a factor)
Add the vinaigrette and toss. Add tomatoes at the end.
Lately I avoid using oil but I really wanted to boost this salad with some olive oil. The soup was oil free and really didn't seem to miss it.
The skies are grey and the air is damp and chilly here in Montreal. Dare I say that it is absolutely miserable. This is why I am trying to eat colors and a lot of fresh items.
It really helps. Otherwise if I consumed fun heavy food I would have to spend my time in bed.
