Vegan Redemption Bowl With Creamy Roasted Onion Dressing
I have to make up for my weekend binge of eating quite a bit of bread which I try to avoid but I just couldn't help myself. I guess I'm helping to drown my misery with bread. I may do it again soon.
Today I will try to redeem it a bit by having a bowl of quinoa and an assortment of veggies.
It doesn't matter what you put in the bowl. The fun is in the dressing.
Creamy grilled onion dressing.
- One roasted onion
- 1 clove garlic
- Juice of 1 lemon
- 1 tablespoon tahini(sesame paste)
- 1/4 teaspoon dijon mustard
- 1/8 cup white balsamic
- 1 tablespoon maple syrup
- 1 teaspoon salt or to taste
- 1 teaspoon pepper
- 1/8 cup olive oil
Add the roasted onion to the blender along with the other ingredients.I didn't roast the garlic but it would be good roasted as well.
For the bowl I used what was in the kitchen. I had purchase some quinoa a while back and thought it was dry. It turned out to be ready to eat so I just added a little water and heated it up in a pot. Quinoa is often eaten cold as a salad but I wanted some hot stuff in my bowl today. I also added some steamed broccoli and sweet potato.
I hope this gives me the license to indulge again. We'll see how much will power I have.
