Spicy Noodles with Muscles & Gnocci
Preparation:
First i started by preparing with the spicy sauce by chopping onions and garlic and sweating them in a hot pan with olive oil, chili flakes, crushed peri peri chilis and butter. then i added white wine and cooked off the liquor until you start to smell the fruitiness of the wine. I then poured in tomato sauce and seasoned with salt, pepper, one bay leaf and cayenne pepper and simmered for 10 minutes.
in a different pot i brought salted water to a boil and added the chinese noodles along with 1 egg and boiled for 5 minutes. after 5 minutes remove the noodles and mix with olive oil to prevent sticking and shock the soft boiled egg in cold water to prevent further cooking.
finally i placed my muscles into the spicy tomato sauce with the gnocci and cooked on low heat for 8 minutes and added chopped parsley and a squeeze of lemon juice, cut the egg in half and what should be left is a perfect runny egg yolk to balance out the spicyness from the sauce.
