Crispy Fried Noodles, Chinese Fried Noodles
Prep period: 2 minutes Cook period: 25 minutes Total period: 27 minutes
Can make up to 3 cups
Ingredients
one packet hakka noodles
two tsp oil
salt to your liking
oil for deep-frying
Process
Mix the oil, salt and enough water in a deep non-stick pan and allow it to boil.
Once it starts boiling, put the noodles and cook on and heat up to three to four minutes, while stirring at some time. Strain well, do not refresh it with water, keep aside and allow it to dry completely for 10 to 15 minutes.
Heat up the oil in a deep non-stick kadhai, add a few noodles at a time and deep-fry on heat till they turn golden brown in colour from all the sides. Strain into table napkin and keep aside.
Do again step 3 to deep- fry the remaining noodles.
Cool completely and gently break it into pieces.
Store it in cool container and use as required.
