Large industries worldwide are those that originate products and services in order to satisfy the needs of human beings, using some component of the environment, even as raw material, without being aware of the deterioration that has occurred over time. The meat industry is not excluded from this, since due to its variety of processes, it develops a large quantity of solid, liquid and gaseous waste, which increases as productivity, quality and sanitation evolve. The explosive behavior of industries regardless of the deterioration of the environment is what generates the great environmental impact in the world.

The lack of environmental knowledge of the industries, the lack of commitment to maintain the proper functioning of the same, but contributing to the environment. For companies to be really effective in their environmental behavior, actions must be conducted within a structured management system integrated to the general activity of the industry.

Environmental regulations for industries

Industries due to customer demand, their processes and products are now developed on a large scale, and consequently there is a high increase of waste and residues. The industry has the knowledge that all living beings depend on the environment but the refusal to contribute to it is evident to such an extent that there are laws that require their collaboration and environmental funding.

At the international level, ISO 14,000 standards regulate environmental management within the company, regarding the implementation of an environmental management system and environmental audits of the company, among others. In particular, ISO 14001 "Environmental Management Systems" (Ref. 10 and 11), specifies the requirements for an environmental management system. Its relationship with nature is only based on profit and exploitation, when the duty is that, just as we benefit from the environment, we contribute to maintaining it.

Environmental responsibility for industries

It is of great importance that industries can identify the environmental costs generated by their production processes as they are fundamental because they will provide options for management to make the best decisions to maintain the productivity of the same, covering customer needs, on the other hand may adopt the right tools and strategies to assess their situation, collecting all the information that will allow you to make an implementation plan to execute, and likewise contribute to future generations in relation to environmental conservation.

The man is responsible for the deterioration of the environment, the garbage that people originate and those produced by industry daily including toxic fumes are the cause of the ozone layer is in poor condition, as this pollution has resulted in the death of many species, yet modifying the environment as with climate change in the world.

Within this perspective it is observed that environmental education is of vital relevance for industries since according to the author this will allow them to develop strategies to reduce environmental costs that will allow them to be able to invest in the environment and raise awareness. In 2003 Iturria considered that environmental costs and the performance of processes and products can promote more accurate costing and pricing that can help companies in the design of more environmentally preferable processes, products, and services.

Let us then evaluate that accounting must be capable of generating more efficient qualitative and quantitative information, which encourages the generation of value and broadens the capacity of interpretation and understanding of business management in a more comprehensive sense.
