Recipe 2: What's for dinner?

It’s a new day (here in Holland) and I just went out shopping for groceries, thinking of what I could eat for dinner. I thought of a recipe I came across some time ago, credits go to the gym I work out! I like this one very much, and of course it’s very healthy and tasty as well!
Omelet wrap with chicken, hummus & avocado
The ingredients are the following:
- 2 eggs
- 1 avocado (ripe)
- Salt & pepper
- 0,5 lb chicken breast
- 1 red pepper
- 1 red onion
- 2 oz fresh spinach
- 0,5 lb hummus
- 1 tomato
- Wok
- Optional: some fresh garlic and parsley
How do you make it?
For 1 omelet wrap;
- Put 2 eggs in a mug of sliced fresh parsley leaves.
- Bake the omelet and put it on a plate.
- Spread the omelet with hummus.
- Put a few leaves of fresh spinach in the middle.
- Cut the tomato into thin slices, place 3 pieces in the middle on the spinach.
- Split an avocado in the middle and pull out the pit. Make small & thin strips by cutting a knife into the avocado. Now you can knock out the strips with a knife. Put 3 strips in the middle of the omelet.
- Cut the chicken breast into cubes and give it some spice of your own choosing. For example: some garlic, salt and pepper.
- Cut the peppers into thin strips.
- Cut the red onion into thin rings.
- Now put the chicken, onion and red pepper into the wok.
- Pour the moisture out of the wok.
- Now fold the omelet as shown in the picture.
