Homemade Pizza Calzone

This is a pizza recipe I rarely use as calzone is not my favorite. I like the pizza but it's more work for me and time is always limited. I'm used to the regular pizza and lately to pizza rolls as those are fantastic, but today I made an exception.

Ingredients

For The Dough

  • 1kg all purpose flour or pizza flour,
  • 70g extra virgin olive oil,
  • 20g salt,
  • 1tsp sugar,
  • 50g fresh yeast,
  • 700ml warm water.

For The Filling

  • ham/salami/sausage (whatever you like)

  • cheese,

  • pizza sauce.

  • 1 egg.

Directions

Preheat oven to 500° and add baking paper to two large baking sheets.

Add one teaspoon sugar to 400ml warm water, add the yeast and let it rise in a warm place for about 10 minutes. Add flour to a mixing bowl, add salt, olive oil, and then add the yeast. Start kneading and add the rest of the water. You can add more flour and/or water if needed. Knead till you get a non sticky dough.

Cover with a clean table cloth and rest for an hour or so in a warm place till it doubles.

I used a mix of flour. 350g bread flour (BL55), 250g spelt flour and 600g all purpose flour. I like mixing flour lately.

Divide pizza dough into four equal pieces. It's pretty difficult for me, somehow I never manage to get equal pieces but in this case it wasn't relevant as it was for us.

On a floured surface roll one piece of dough out into a circle, must be 0.5cm thick.

This is the best I could do. It's not round, far from it but it's ok.

Spread the pizza sauce or ketchup evenly. I'm using my own homemade pizza sauce made of homegrown tomatoes and vegetables. Make sure you leave about 1cm space at the edges.

Add sliced salami...

and cheese.

Brush the edges with water.

Gently fold the dough in half and crimp the edges of the dough all around.

Transfer the pizza to the baking sheet.

Brush with a beaten egg, then punch some holes in it to let the steam out.

Bake till it's golden brown.
