Home made pizza + wine = the perfect Saturday night

Making homemade pizza is easy and rewarding when you have been around the whole day and want a relaxed Saturday night.

The important thing is that you choose quality ingredients:

The base

  • Tomato sauce (the stadard 0.5l glass container is enough for 2 people and you have some spare ones for literally hundreds of recipes),
  • 180/200g of fresh mozzarella.
  • Salt
  • Oregano
  • The dough (You can either make it yourself or buy prepared rolls which you can find of very good quality at least here in Germany).

The topping:

The awesomeness of pizza is that you can top it with (almost) whatever you want!!

Be careful with some toppings as some if them do not need the same cooking level of pizza (for example raw ham does not have to be cooked, parsley as well and many others...feel free to ask if you have doubts).

Be careful however not to commit culinary sins like putting:

  1. Pasta
  2. Rice
  3. Fruit
  4. Anything sweet
  5. Other grains

If you do you will be sent to culinary hell and condemned to drink cappuccino every evening.

The preparation:

  1. Lay the dough on the baking pan (use a layer of cooking paper between the pan and the dough to prevent it from sticking)
  2. Put it in the oven heated between 180 and 220 °C (it depends on the oven and on the vertical positioning of the pan: generally in the middle is better).
  3. It should take between 15-20 minutes and then it's ready!!

The wine

Choosing the wrong wine can easily ruin any dinner, regardless of your cooking skills or greatness of the recipe.

As a rule of thumb I recommend the following:

  • Red wine goes well generally except for fish (only particular types match the taste of fish).
    It is also good for cheese-abundant pizzas especially if the cheese is aged.
    Great for red meat, salami and raw ham as well!
    Please do not serve sweet red wine with pizza!!!*
  • Dry white wine, both sparkling and still is generally good especially for fish and/or vegetable-rich pizzas.
    If you have fresh goat-sheep cheese on it go for white wine.
