These first days of quarantine have been a bit stressful, although I am not much of a street person, my family is, my brothers work and have to go out every day, so the confinement has them like caged lions, my parents, although they don't go out much the only fact of an imposed confinement changes their attitude and they also feel caged, and that's without talking about My Mathias who is climbing the walls. The truth is that I try to stay calm so as not to panic and add to the collective hysteria that exists at the moment.



I prefer to spend my time researching and finding ways to help. For a little over a month I have been making yogurt at home to make ice cream and sell it, something that with this quarantine I have had to stop, however, I have not stopped making yogurt, because the benefits it brings to our immune system are great, so I wanted to share with you how you can do it at home in a practical and economical way.



Many times we stop at the time of making some recipe because we think it is something difficult and with expensive or strange ingredients, when the truth is the opposite, and the Greek yogurt is one of these. That creamy texture and delicious flavor many think are extra ingredients and the truth is that it's just the same natural filtered yogurt. Come with me and I'll show you how to make your own Greek yogurt. Enjoy!


Ingredients


  • 2 liters of milk.
  • 250 ml of natural yogurt.




Preparation




As you can see we will only need two ingredients milk and a natural yogurt from the ones we buy at the supermarket, even the liquid yogurt can be used. We will start by heating the milk until it reaches a temperature of about 70°C. If you don't have a kitchen thermometer you can check the temperature by inserting your little finger (clean obviously) in the milk and counting, ideally when you reach 5 or 6 you will start to feel it burning, that's the right point.








With the milk at the desired temperature, we are going to add the yogurt in a small container and add approximately one cup of that milk, integrate it and add it to the rest of the hot milk, beat well to integrate everything and cover the container.







To keep this container hot we can use a blanket or a thick cloth and wrap it, and additionally we put it in a plastic bag and close it, to take it to a closed place, I use the oven, you can put it in a kitchen cabinet or even in the closet, the idea is that it is a place where the temperature is constant and there is no draught, this will depend on the yogurt is created as it should be. We will leave it there for at least 12 hours.






After 12 hours and we have our classic natural yogurt ready, if we want we can simply take it to the refrigerator and eat accompanied by some jelly or jam, or granola and honey, is delicious, now if you want even more delicious, the process to follow is as follows, we will place this yogurt in a strainer with a wipe or cloth, which will make us the function of filtering our yogurt, this will help remove excess liquid and leave us a creamy Greek yogurt and much richer. We will leave it filtering for at least 4 hours.






Eating yogurt helps to strengthen our body's defences, improves the functioning of our stomach, as it helps to stabilize the bacterial flora, helps to lower the levels of cholesterol in our body, blocks the reproduction of bacteria in our intestine, contains vitamins and antioxidants that help in the care and prevention of cardiovascular disease, in short it is a product that without hesitation should be included in our diet.




The Greek yogurt because it is more creamy than the classic one called natural yogurt, is great to use in salad dressings, I just add a little mustard, sugar, salt and pepper and I have a delicious dressing free of mayonnaise and fat; with a little salt we have a very rich spreadable cheese, and if we add chopped gherkins with paprika and onion we have a wonderful dip for a snack, so this is a very versatile and delicious recipe that also gives us a plus to our immune system which is great.

Hola Mis Queridos Brujitos...!

Estos primeros días de cuarentena han sido un tanto estresantes, aunque no soy de salir mucho a la calle, mi familia si, mis hermanos trabajan y a diario tienen que salir a la calle, por lo que el encierro los tiene como leones enjaulados, mis padres, aunque no salen mucho el solo hecho de un encierro impuesto les cambia la actitud y también se sienten enjaulados, y eso sin hablar de Mi Mathias que esta que se sube por las paredes. La verdad yo trato de mantener la calma para no entrar en pánico y no sumarme a las cifras de histeria colectiva que hay actualmente.



Prefiero invertir mi tiempo en investigar y buscar la manera de ayudar. Desde hace poco más de un mes estoy haciendo yogurt en casa para fabricar helados y vender, cosa que con esta cuarentena he tenido que detener, sin embargo, no he dejado de hacer yogurt, pues los beneficios que este le brinda a nuestro sistema inmunológico son geniales, entonces quería compartir con ustedes como lo pueden hacer en casa de una manera práctica y económica.



Muchas veces nos frenamos a la hora de hacer alguna receta porque pensamos que es algo difícil y con ingredientes carísimos o extraños, cuando la verdad es todo lo contrario, y el yogurt griego es uno de estos. Esa textura cremosa y ese sabor delicioso muchos piensan que son ingredientes extras y la verdad es que solo es el mismo yogur natural filtrado. Acompáñenme y les muestro como preparar su propio yogurt griego. ¡Disfruten!


Ingredientes


  • 2 Litros de leche.
  • 250 ml de yogurt natural.



  • Preparación




    Como pueden ver solo necesitaremos dos ingredientes leche y un yogurt natural de los que compramos en el supermercado, incluso el yogurt liquido puede servir. Comenzaremos calentando la leche hasta que este alcance unos 70 °C de temperatura. Si no tienes un termómetro de cocina puedes corroborar la temperatura introduciendo tu dedo meñique (limpio obviamente) en la leche y contando, lo ideal es que cuando llegues a 5 o 6 ya empieces a sentir que quema, allí es el punto correcto.








    Con la leche a la temperatura deseada, vamos a agregar el yogurt en un envase pequeño y le agregamos una taza de esa leche aproximadamente, integramos y la agregamos al resto de la leche caliente, batimos bien para integrar todo y tapamos el envase.







    Para mantener este envase caliente podemos utilizar una manta o un paño grueso y envolver el mismo, y adicionalmente lo introducimos en una bolsa plástica y cerramos, para llevarlo a un lugar cerrado, yo utilizo el horno, pueden colocarlo en un gabinete de la cocina o incluso en el closet, la idea es que sea un lugar donde la temperatura sea constante y no haya corrientes de aire, de esto dependerá que el yogurt se cree como debe ser. Allí lo dejaremos por al menos 12 horas.






    Pasadas las 12 horas ya tenemos nuestro yogurt natural clásico listo, si lo deseamos así lo podemos simplemente llevar al refrigerados y consumir acompañado de alguna jalea o mermelada, o con granola y miel, queda delicioso, ahora bien si lo deseas aún más delicioso, el proceso a seguir es el siguiente, vamos a colocar este yogurt en un colador con un repasador o pañito, que nos hará las función de filtrar nuestro yogurt, este ayudara a retirar el exceso de líquido y nos dejara un yogurt griego cremoso y mucho más rico. Lo dejaremos filtrando por unas 4 horas como mínimo.






    Y es que consumir yogurt ayuda a fortalecer las defensas de nuestro organismo, mejora el funcionamiento de nuestro estómago, pues ayuda a estabilizar la flora bacteriana, ayuda a bajar los niveles de colesterol en nuestro organismo, bloquea la reproducción de bacterias en nuestro intestino, contiene vitaminas y antioxidantes que colaboran en el cuidado y prevención de enfermedades cardiovasculares, en fin es un producto que sin dudarlo deberíamos incluirlo en nuestra dieta.




    El yogurt griego por ser más cremoso que el clásico llamado yogurt natural, es genial para utilizar en aderezos de ensaladas, yo solo le agrego un poco de mostaza, azúcar, sal y pimienta y tengo un aderezo delicioso libre de mayonesa y grasa; con un poco de sal tenemos un queso untable muy rico, y si le agregamos pepinillos picados con pimentón y cebolla tenemos un dip maravilloso para un picoteo, así que esta es una receta muy versátil y deliciosa que además nos regala un plus a nuestro sistema inmunológico lo cual es genial.
