Filipino Food: Adobong Talong (Stir-fry Eggplant 🍆)
Today, I wanna share with you an eggplant recipe which I learned from my mother. This is one of my favorite filipino vegetable dish called adobong talong or a stir-fry eggplant.
Ingredients
2 medium eggplant (size and amount depends on you)
*carrots (amount depends on you)
1 medium onion, and few stalks of spring onions
2 eggs
1 teaspoon fish sauce
2 tablespoon soy sauce
1 tablespoon oyster sauce
1 tablespoon brown sugar
cooking oil (depends on your cooking that won't get dry)
To start with, I cut 2 medium size eggplant 🍆, carrots (amount depends on you), and some onion and spring onions. I set them aside.
Then, heat a pan with a good amount of vegetable oil (any cooking oil will do), add onions and garlic when the oil is hot enough.
Then, sauté first the carrots, before the eggplant. This way the eggplant won't be overcooked.
Add the eggplant, and put 1 tablespoon of fish sauce, 2 tablespoon of soy sauce, 1 teaspoon of oyster sauce (optional), and a tablespoon of brown sugar (white sugar will do too).
Saute until slightly cooked. Add 2 eggs (depends how many do you want), and cooking oil (more cooking oil, the better especially when it won't look dry).
Now it's ready to eat! With rice, is much better... 😋!
