1 1/2 cup Butter
1 1/2 cup Granulated Sugar
2 Eggs
1 1/2 teaspoon Vanilla
3 1/2 cups Flour
1 teaspoon Baking Powder
1/2 teaspoon Salt
Cream the butter and sugar together. Add the eggs and vanilla and mix well. Add the dry ingredients..Chill dough, then role out on a liberally floured countertop. Bake at 350° for 8-10 minutes.. Decorate as desired.
The grandkids all love cooking baking day at Grandmas house! We have so much fun....and then I spend months getting frosting scrubbed off furniture and walls! It's worth it though!
2 cups shredded unsweetened coconut
1 cup unsweetened coconut flakes
5 tbs coconut oil
1/4 cup REAL maple syrup
2 tbs coconut rum
large bar dark chocolate
(For non-alcoholic version use Vanilla extract instead of rum)
Soak coconut flakes in rum to re-hydrate. Set aside.
In food processor, pulse shredded coconut into a fine coconut flour. Add coconut oil and maple syrup to food processor and blend.
Transfer to bowl with the rum and coconut flakes and mix well.
Place in freezer for twenty minutes to a half an hour to firm.
Using two teaspoons form mixture in to small balls. Place in freezer as needed to keep mixture firm.
Dip balls in melted dark chocolate and cover completely.
Store in refrigerator.
