Chinese food but rather Thai food

Pad thai scampis.

All right, it's not really Chinese food but rather Thai food...

This dish is really an invitation to a culinary journey, I let you discover it!

Preparation (for 2 persons)

  • 150g rice noodles
  • 3 spring onions
  • 1 clove garlic
  • 50g soybean sprouts
  • 2 eggs
  • 100g peeled scampis
  • 30g of roasted peanuts
  • 2 tablespoons nuoc mam
  • 2 tablespoons soy sauce
  • 2 teaspoons brown sugar
  • 1 small lime
  • Fresh coriander
  • Oil

Preparation:

  • Cook noodles according to package directions
  • Squeeze the lemon to extract as much juice as possible.
  • Prepare the sauce by mixing nuoc mam, soy sauce, brown sugar and lemon juice.
  • Peel and thinly slice the onions and cut them finely.
  • Chop the garlic clove
  • Sauté the garlic and onions in a saucepan with a little bit of oil.
  • Drain your noodles
  • Add sauce, soybean sprouts and noodles.
  • Then add the eggs, peanuts and scampers.
  • Cook for a few minutes until the sauce thickens
  • Serve hot, sprinkle with crushed peanuts and coriander (according to taste)
