💃Spaghetti-Vibes Salad (This is NOT Your Wilty Iceberg Lettuce in a Plastic Container) Vegan/Gluten Free/Low Carb
I know! I think the same thing when I hear "salad." Un-enthused and generally put off...
I know. I get it. I'm withya.
...
But dare I say it?
This is different than that.
I'm eating spinach like I'm Popeye over here! Pretty soon I'm going to have bigger biceps than I did the summer the ice cream machine at my part time job broke and they switched to hard, bucket stuff for 2 months.
That said, your main green is super important in getting vibey with your salad.
Should I call it something else?
I feel like I'm just rolling my eyes back so far in my head every time I say that word that just makes me think of some nasty, browned (cringe) iceberg lettuce with like... a package of ranch on the side or something.

Find what base you like! Arugula, mustard greens, spinach, kale, curly kale, amaranth, beet leaves, radicchio... You do you!
I'm telling you, choking down a green that you're not into is like dating a guy because he's rich. Sure, benefits but just staaaap it.
OK, so now that we're clear... I'm jammin' with spinach so that's what I fill my bowl with and then the fun really begins!
This has kind of a spaghetti-feel!
Herby Tomatoey Salad
What You Need:
Salad:
- A lot of spinach
- 1 avocado (cubed)
- 1 cup cherry tomatoes (quartered)
- ½ yellow bell pepper
- 1 small head of broccoli
Sauce:
- 3 tomatoes
- ½ cup of basil
- 2 tbsp thyme
- 1 tbsp chives
- 1 tsp pink Himalayan sea salt
- ½ yellow onion
- 3 garlic cloves
- 1 tsp black pepper
- 1 avocado
- 1 tbsp lime
Toppings:
- ½ cup roasted pumpkin seeds
- 2 tbsp vegan cheese (I used sunflower cheese)
What To Do:
In a food processor, "pulse" the onion and garlic together then pour into a skillet on medium heat with some olive oil and cook for about 3-5 minutes (or until browned) then set aside to cool.
Put the rest of the sauce ingredients in the processor and then set aside.
In a big bowl, assemble the salad ingredients. Throw everything in together (it doesn't matter how you cut it, you're just going to eat it soon anyway!)
Pour the cooked onion and garlic into the food processor and blend together with everything else.
Drizzle the sauce all over the salad and mix!
Sprinkle with toasted sesame seeds and vegan cheeze if you want to get fancy!
