recipe of the day: risotto agli asparagi
Hello friends, a little late I'm going to share the dish I made a few days ago, Unfortunately these days I'm busy with a lot of work and I forgot to share it, a very simple dish to prepare, basically a risotto with asparagus, which is a vegetable that is in season in Italy at the moment.
Ingredients
Rice 120 gr
Asparagus
onion
butter
mature cheese
a little water
salt
half a carrot
This risotto is a risotto How it is prepared in Italy, That is, towards the end the so-called mantecatura will be done, at the beginning however you have to cut the carrot and the onion quite finely and put them in a fairly large pan with a drizzle of oil.
Put it from the pan on a stove and brown it for about 2-3 minutes, then add a little water, so as to cook the vegetables.
When the vegetables are cooked, add the rice and brown it for a few minutes, a kind of toasting because this gives more flavor to the rice, and immediately after add a little water, not too much which will then be absorbed by the rice.
When the rice is more or less ready, usually with this type of rice it takes 15 minutes, add a little butter and a little cheese. This would basically be the mantecatura phase, to create the so-called creaminess inside the risotto.
This thing must be done practically on a low heat, some cooks even do it with the heat off, and then after stirring it can be served on the plate.
Of course, the advice is to eat the risotto immediately so hot because it is tastier, of course you can add more cheese, possibly very mature cheese
