Rainbow Fruit Flan
Hello!
I have a very easy fruit flan recipe to share today that can be modified in so many ways to your liking! This fruit flan is great for family, or when you have friends to come over for tea or coffee, and definitely pretty to bring to a party/pot luck :D
My fruit flan also requires nothing too complicated from the pantry and the ingredients are easy to find almost at every grocery stores anywhere.
Come take a look the recipe :D
Crust
- 1 cup of all purpose flour
- 2 tablespoon of icing sugar
- 1/2 cup of butter (you can use margarine or butter flavored shortening)
Method
- Mix flour and icing sugar, cut in butter, knead and form a ball.
- Cover with plastic, chill dough for 30 minutes
- Press dough firmly on a pie pan as shown on picture
- Bake at preheated oven, 425 F, for 12 minutes
- Set aside to cool to room temperature
Filling
- 1 box of vanilla pudding and pie filling
- 2 cups of cold milk
Method
- Follow the instruction on the box (mix ingredients in a bowl and whisk to thickened)
- Chill in the fridge for 20 minutes
- Once nicely chilled, whisk thoroughly, and pour onto crust
Topping
- fresh strawberries, sliced
- canned mandarin, drain but reserve 1 tablespoon of juice
- canned peaches, drained
- fresh kiwi, sliced
Glaze
- 1/2 cup of apricot jam
- 1 tablespoon of lemon juice
- 1 tablespoon of juice from the canned mandarin
Method
- Lay fruit slices covering pudding filling
- Mix jam and juices, heat on microwave for 1 minute to make it easier to combine
- Brush glaze on fruit slices
- Chill flan for at least 3 hours
- Slice and enjoy!

I'm trying to remember if I've had fruit flan before, definitely looks like something I'd get into XD your recipe looks easy enough but I might pass it on to the house chef as I can burn water XD
:D I burnt my pans a couple of times too when am steaming something and did not realize water had evaporated :D
