Sushi Rice

Total Cooking Period: 25 Minutes
Ingredients
two cups uncooked glutinous white rice
three cups water
half cup rice vinegar
one tablespoon vegetable oil
quarter cup white sugar1 teaspoon salt
Instructions:
Wash the rice in a strainer or colander till the water runs clear. Mix with water in a medium saucepan. Bring to a boil, then reduce the flame to low, cover and cook for twenty minutes. Rice should be tender and water should be absorbed. Set aside till cool.
In a small saucepan, mix all together the rice vinegar, oil, sugar and salt. Cook over medium flame till the sugar dissolves. Cool, then mix into the cooked rice. When you pour this in to the rice it will seem very wet. Keep mixing and the rice will dry as it cools.
