Stuffed & Roasted Deliciousness!
Bell peppers are one of those incredibly versatile veg and I use them often in my dishes, but this time I decided to give them the spotlight. There are plenty of things you can stuff bell peppers with, but this time I opted for some fried seasoned basmati, mixed with baby spinach, onion, garlic and feta cheese crumbles.
I love baby spinach because it is not as "sandy" as the mature spinach, it has virtually NO flavour but is PACKED full of nutrients which is a wonderful addition to most kids meals. In fact I often just dice it fresh and sprinkle it over Jude's food - although, he is actually quite happy to munch the fresh leaves whole.
In this instance, after having cooked the seasoned rice, I popped it into a pan and added the chopped spinach, a little garlic and some diced onion.
Once the fried rice had cooled somewhat, I crumbled in the feta cheese.
Once that is done, there is pretty much nothing left to do other than cut open the pepper, hollow it out, add the stuffing and then pop the peppers "lid" back on.
Then stick it into the oven at 180 degrees for approx 45 min. Then you are presented with this absolutely delicious little pot. :)

Still trying to decide if I would want one without the onions or if the onions are fine. How cooked are they? Do they get brownish? Doesn't seem so :(
No, I did not sautée the onion - but then I am a raw onion lover - so I like the strength of it's flavour raw or just slightly cooked... although these were roasted for some time, so whilst they dont have the golden finish, they were in fact cooked. I would imagine that if you sautee the onion it would add a great new dimension tot he flavour, as fried onion always does... but sometimes, I am lazy haha!!!
Looks delish, I also stuff my bell peppers, especially I like the red ones to be filled with ground meat... Your filling looks yummy with the rice and the spinach combine.

That looks yummy and I will admit that I substitute riced cauliflower for the rice sometimes. I have never done it with the spinach. That gives it a whole other take!
