In fact, everything is simple for someone who already has experience in this field, hehe. Bread baked from sourdough and yeast dough are different things, simple as that. And, besides that - yes, using your own live sourdough and keeping it alive is not a one-time event, but an ongoing process that may seem complex and tedious. Doing a sourdough bread is in general, also a complex, tedious business, that swallows a lot of your time - but very grateful in return. So, if you can afford it, then the answer is: yes.

You are right but I don't have any comparison. I haven't tasted a sourdough one 🤕. Hence my adventure 😎
That was the aim really! To be grateful for the experience, for the taste (claimed by all bakers of sourdough bread) but I failed terribly.
Not before I taste an actual sourdough bread... And also have a reference for starter.
