Bingka/Baked Tapioca Cake is a traditional favourite. Mum, used to love make these ...
... and so I thought I’d give it a try.
Took me 3 days to find Tapioca. Apparently, because of the lockdown, some stuff are not delivered on a regular basis. Well, I finally found it and got started.
I had to grate the tapioca. That took some time - about 20 minutes. Then I added 2 eggs, lightly beaten, Coconut Milk, Sugar, Salt and bunked it in the over for 75 minutes.
Cooled it on a rack. And the whole family ate to our hearts’ content!! Now I know why Mum loved making these. Easy and Yummy!!
Thank you for your support. Here's a !shop as token of appreciation.
Cool! We have a similar dish, we simply call "cassava cake". 😁
Yum! :-p
