Chocolate Cookies

Sometimes you find yourself sitting around late at night having a sweet, sweet chocolate craving, even though this sort of scenario isn't that common in my book, I do occasionally feel like getting up and baking something very fast and making myself so full prior to bed time, which I actually hate doing, but oh well.

This recipe is not just super simple it is also the most basic one out there. Nothing out of the ordinary on your ingredient list, except for perhaps a handful of rolled oats that I threw in the dough since I had just a little bit left and couldn't really use them for anything else.

Ingredients:

• 1 egg;
• 1 cup butter;
• handful of oats (optional);
• 3/4 cup brown sugar;
• 1/2 cup white sugar;
• 3/4 cup unsweetened cocoa powder;
• 1 3/4 cup all purpose flour;
• 1 teaspoon baking powder;
• 1/2 teaspoon vanilla extract.

Directions:

Cream the butter and sugars until the mixture turns light in color, then crack in the egg and mix for additional minute or two, add in vanilla extract.
In a separate bowl sift together flour, cocoa powder, baking powder and oats, then add in the dry ingredients into the batter, make sure its combined thoroughly.
Line a baking sheet with parchment paper, take spoonfuls of dough (you may additionally roll them into balls, if you please) and place onto the baking sheet. Preheat your oven to 350 F and bake for 12-15 minutes.
Let the cookies cool completely, serve with milk or coffee and enjoy :).

Don't recall having chocolate cookies with rolled oats before, but they certainly were a nice addition for a change, maybe a little weird, but I didn't mind one bit!
