Hello! I asked Dona to let me see her workplace and how she prepares the food I buy from her. She prepares healthy vegan food, starting this for health reasons, firstly for herself, and now, happily, for others too. To my delight, she agreed to let me in, but on the condition not to fully disclose the cooking process. So today I'll show you a few things, but I won't specify the quantities and temperatures at which her products are made, only the process, as I stayed up late and missed a few steps.

Here she boils the mixture of pumpkin seeds, which she previously blended. Once it reaches a certain temperature, she regularly stirs to prevent burning, then pours the mixture into the press to strain. Beforehand, she places a cheesecloth in the press to hold the mixture that will turn into a snack. After the milk has strained, she puts it back on the stove for another round of boiling, which after a bit more work will turn into suuuuper tasty cheese. Then she adds lemon juice. This is the only additional ingredient she adds.

While the cheese pressing process is underway and the milk is being obtained, the girl working with her prepares ingredients for another type of product.

Next up is the cashew yogurt. Pre-soaked and blended, then subjected to heat treatment and strained, it's time for packaging. Everything is done by hand since her business is still small. She fills the yogurt, then places it in the foil sealing machine to protect it from dirt and preserve it. Finally, she adds a lid and label. And finally, ready for distribution to the stores!

Here she prepares two snacks. One is made from the pumpkin seed mixture, to which she adds salt, olive oil, and "samardala" - a Bulgarian spice. The other snack is made with cashew milk, olive oil, garlic, and oregano. She measures the exact weight, then fills the containers and packages them. I hope you found it interesting.
