Steemit Sandwich Contest Week #75: Take two - Cool Tuna Salad Pinwheel
As I have been saying these past few weeks, the simple sandwich has been my life saver many a time; quick and easy to throw together without turning the stove on! What a bonus when you're in the heat of summer AND the Electricity supplier that's been so reliable in the past lets you down once too often!
That's what happened on Saturday, no electricity for 14 hours!!!
All due to a tree planted on the verge by an old neighbour years ago, who at the time did not look up and see the overhead power lines right above the little indigenous tree that one day would cause havoc!
A quick gardening lesson - Beautiful majestic Leopard Tree in the background will sadly be cut down now! We need to ensure that what we plant will not infringe on whatever surrounds it when it's fully grown!
Apologies for the photo quality but it's a rather cloudy afternoon here so it's not too clear.
Back to food, and sandwiches in this instance, we had takeout the night before the electricity outage and really did not feel like oily fast food again, so out came the salad ingredients and the faithful old sandwich was turned into a giant salad sandwich.
My cell phone was dead, the power packs were dead so I could not even take a pic of that sandwich and use it for the contest!
But today I will show you how to make a Cool Tuna Salad Pinwheel Sandwich.
I know many of you are in the midst of winter, but remember this one when it's summertime again, really delicious!
INGREDIENTS:
- Rotis excellent Indian flatbread bought at a local spice shop
- 1 can Tuna flaked & drained
- 1 Spring Onion chopped
- Parsley
- Red Bell Pepper diced
- Cucumber diced
- Mayonnaise
- Pesto
THE ASSEMBLY LINE
Toss all filling ingredients together, except for the pesto
Cut the rotis in half
Place filling down centre of roti & dot with Pesto
Roll up into a tube
Arrange to make your pinwheel & garnish with Parsley & Bell Peppers

Love the pesto add. Never thought about that with my tuna! Love both so why not have them together!! How you do it I don't know....2 entries in one week! You never cease to amaze me....I would take one of each please, lol ;)

I used to eat quite a few tuna salad and chicken salad sandwiches but quite them on the Keto because of the bread. But I have low carb wraps, and am suddenly quite hungry for Tuna Salad.
My secret ingredient in Tuna Salad is sweet relish. I will try the pesto in it's place...

You could use a lettuce wrap as well, we had a burger in that and hubby had no bloatedness afterwards. I must try relish next time, would add a real nice sweet & sour tang to it :)

Super delicious sarmies @lizelle this filling is great on pasta as well, avoiding a kitchen at all costs during the hot humid months...
For sure, hubby and I have been enjoying loads of salads, I really don't enjoy these hot and humid days, can't wait for winter!

Oh, that's great. It looks like a perfect snack for hot summer days when you don't want to eat some heavy food. I have a cold winter here, but I guess I can still find those ingredients in some shop. I don't like to buy those things, it's always better to have them in your own garden, but what to do.
Oh for sure, I grow herbs and a few veggies, the spring onions was from the garden but we have mischievous monkeys trouping through our garden mornings and late afternoon and they eat the veggies before it's even ready for picking so now we only grow lettuce, spinach, leeks etc and herbs of course but beans, corn and even carrots aren't safe. We will have to build a little greenhouse for that!
