As many of you asked me, here is my first cooking recipe: Chicken with mustard [and roasted pineapple]
Some of you contacted me to start uploading my recipes and taking advantage of the weekend, I agreed to share a very simple and delicious dinner.
Ingredients: |

- 4 chicken breasts cut in half.
- 2 tablespoons of mustard.
- 2 pineapple slices
- 1 cup chopped onion.
- 1 cup of onion in rings.
- 2 tablespoons of chopped garlic.
- 1 cup chopped cilantro (only the stems).
- Butter.
- Pita or Arabic bread.
- Sugar.
- Salt.
The chicken: |

First pour on a pan 2 tablespoons of butter and melt. Then sauté the chopped onion, garlic and cilantro (it's important to use only the stems to enjoy a more intense flavor) over low heat. Stir until the onion turns a transparent color and place the chicken breasts over the mixture. Remove until the breasts turn a grayish color.
Then pour the two tablespoons of mustard. Remove everything and add the onion rings. Pour a cup of water and salt to taste. Cover and remove every 5 minutes for 20 minutes. IMPORTANT: Don't forget that this plate should be cooked over a low heat, so the mustard will not taste bitter.
Pineapple: |

Cut the pineapple slices into strips, as long as you can. Then pour sugar in a bowl and bathe the strips in that sugar, until they are completely coated. Add a pinch of oregano and simmer in a pan. It must be stirred constantly so that the sugar does not burn.
Wait for the pineapple strips to brown and the sugar to melt. When ready, serve with soy sauce. The contrast of flavors is exquisite.

Toast pita bread or Arabic bread until it looks like a cookie. The secret is the crispyness of the bread. When you are ready, serve on bread the chicken and place the sauces of your choice. (To the photo I added the delicious sauce of chicken onion and Neapolitan sauce) Accompany the chicken with the pineapples and taste all those flavors by having a party in your mouth.
I recommend accompanying this plate with rosé wine or a light-tasting drink.
