According to our region and culture, we have different recipes and ways to prepare the paella: rabbit, vegetable, chicken, fish, mixed ... Today I bring you my favorite recipe, Paella de Mariscos Valencian style. I hope you like it!
INGREDIENTS TO MAKE A PAELLA FOR 4 PEOPLE.
400 gr of round rice how to make the paella: step by step
800 ml of fish broth (can be purchased, but if you go to the fish shop ask for some fish heads, and only with these or the shell, put in the water, will provide the ideal flavor for the preparation)
1 large or 2 medium sepia
12 prawns
6 crayfish
250 gr of clams or chirlas.
250 gr of mussels
150 gr of Peas
1 medium onion
1 red pepper
Saffron
Salt
Parsley
A garlic clove
2 ripe tomatoes
HOW TO MAKE A PAELLA: REEL PAELLA STEP BY STEP.
To begin we will put a good oil splash to the Paella and once hot we will add the seafood: prawns, crayfish and clams - that previously we will have cleaned with water -, when they are golden we remove them and reserve separately.
Then we will cook the chopped cuttlefish until it is golden brown. We will remove it and reserve it.

Next, sauté the onion and garlic well minced and the pepper cut into strips. Let it sauté well, until it is soft, and remove only the pepper. In this part, we will also add the cuttlefish ink so that the preparation takes more fish flavor.
Add the grated tomatoes and mix until they are cooked.
It's time to put the rice. We will remove it for a while. The idea is that it is well impregnated with the sauce so that it has more flavor. After a few minutes add the fish broth, salt and saffron.
We will add the rest of the ingredients that we had removed, in a nice and orderly way - as an example you have the photo - from this moment we will not remove more ingredients.
We raise the fire to a high level until it starts to boil and once the water boils, we will keep it on a low heat for about 20 minutes.
Remove the paella from the heat and let stand 5 minutes before serving.
You can cut some segments of lemon and put them around the paella, this will give a fresh touch and a note of color to the presentation of your dish
