BEETROOT SALAD (Eat healthy live healthy)
INGREDIENTS
2 carrots
1 onion
1 beetroot
1 tbsp lemon juice
1 tbsp extra virgin olive oil
2 handfuls fresh coriander
salt and pepper to taste
1 small bowl of sprouts
INSTRUCTIONS
Grate the carrots and beetroot and chop an onion and place in a large bowl. Add the sprouts and give it a good mix.
In a small bowl mix the juice from the lemon, olive oil, salt and pepper (according to your taste).
Drizzle over the salad, and mix properly. Chop the coriander and mix into the salad too. Serve straight away and enjoy your salad.
NOTES
You can add curd, cucumber, tomato, chickpeas, or whatever you like in your salad to eat.
