A healthy salad with potatoes, celery and avocado: Recipe

Salad with potatoes, celery and avocado is quite healthy and rich with taste. The usual taste combination of potatoes and eggs will be complemented in this celery salad and avocado.

Ingredients

• 8-10 potatoes;
• salt - to taste;
• 2 tablespoons of vinegar;
• 4 eggs;
• 300 g of Greek yogurt or mayonnaise;
• 1 tablespoon Dijon mustard;
• ground black pepper - to taste;
• 2 avocados;
• 2-3 stalks of celery;
• ½ small red bulb;
• ½ a bunch of parsley.

Preparation

Boil potatoes in salted water until cooked. Then drain the water, cool the potatoes, peel and cut into small cubes. Sprinkle them with vinegar. Cook the hard-boiled eggs and cool.

Mix yogurt or mayonnaise, mustard and pepper. Add potatoes, diced eggs, avocado and celery to the dressing, cut into thin strips of onions and chopped parsley. Then gently stir the salad.
