Warm greetings my beloved steemians across the globe, I'm so excited to be here to participate in this food diaries contest. I thanks the organizers of this contest in the person of @artist1111, you do well Sir.
So in my post today I will showing the simple meal I made and how I prepared it. The meal I prepared was egg sauce and boiled sweet potatoes, please just be patient with me and read to the end, because you will enjoy it, thanks.
Before I begin, I will list out all the items I used in cooking the meal.
Ingredients
- Egg
- Sweet Potatoes
- Fresh tomatoes
- Fresh pepper
- Onions
- Maggi
- Salt
- Vegetable oil
The above items were all that I used in preparing my sweet little meal.
Method of preparation
I peeled the sweet potatoes and sliced it into the desire size that I wanted, then I washed it very clean, put them into the pot, add a little water and place it on fire to cook for 20minutes.

While the potatoes was on fire, I used that time to prepare other ingredients, like pounding the fresh pepper, slicing the onions and the fresh tomatoes into tiny sizes, I also break the eggs into a plate and whisked it well.

While the potatoes has started boiling, I sprinkled a little amount of salt on it, then allowed it boil again for 5 more minutes before I put it down from the fire and then strand out the water from it.
I placed the frying pan on fire and pour in a little amount of vegetable oil and allowed it to heat for about 3 minutes.

After the oil has heated well I added the sliced onions into it and stir it well.

When the onions begins to get brown, I pour in the fresh tomatoes and pounded pepper, stir it very well and allowed it to fry for about 5 -10minutes.

After 10minutes , I poured in the whisked egg into the frying pan and allowed it to fry a little minute so it could stick together before I used the cooking spoon to stir it.

After turning it all together, I allowed it to steam for about 3-5minutes, then my eggs sauce was ready for eating, though it was too small.

After I was done cooking it, I dished out what I will eat at work during lunch time and pit in my lunch bag to work.

Sweet potatoes and egg are very good source of healthy food, sweet potato has so much of vitamin A and C in it, it also a great source of fiber and potassium, the egg here as we all know contains a lot of protein and healthy carb for energy.
