Introduction
In my food diary contest today, I will love to share with you how I prepare my low budget jellof rice, using egg to garnish it. Kindly stay here with me, because I promise you will enjoy it.

Before I start giving you the step by step method I used in preparing the jellof rice, I will start by mentioning the ingredients I used in preparing it.

Rice
Sachet tomato
Fresh tomatoes
Vegetable oil
Seasoning cube
Onions
Pepper
Egg
Salt for taste
Curry
Crayfish
Spices

I put the raw rice into the cooking pot, added water and placed it on the cooker to boil for about 10-15minutes, after it has boiled, I removed it from the fire and washed it by using the filter to filter out the dirty water from it.

The next thing I did was to place my empty pot on the cooker, when the water in the pot was dried I poured in vegetable oil, then allowed it to get heated for like 2 to 3minutes.

After about 3minutes, the oil was well heated then I poured in the sliced onions that I have sliced and set aside.

After frying the onions for 1 minutes, then I poured in the sliced fresh tomatoes, fried it for some minutes then I added the sachet tomatoes into the pot and stir it very well till it dissolved.
After frying the tomatoes till it dried well, I now added my other ingredients into the pot, like salt, fresh pepper, seasoning cube, crayfish and spices then allowed it to steam for few minutes.

After putting all the necessary ingredients, I added water to it, the quantity I wanted then I allowed it to boiled for about 2minutes then I added the parboiled rice into the pot and stirred it very well so that all the ingredients will mixed well.

After putting the rice on the cooker, I added more water to it and also put the egg into the rice then I covered the pot and allowed it to cook for about 30 minutes.

After 30minutes, I checked the rice on fire, the water has dried off and the food was done and ready. I put the pot down from the electric cooker.

My jellof rice all ready to be eaten, I dished out the portion I wanted to eat and put one egg and enjoyed myself.
