how to make the legendary Hungarian Mushroom Soup Recipe my mom used when I was a kid

Today, I'm going to share with you a much appreciated recipe for Hungarian Mushroom Soup, originally published in The Moosewood Cookbook by Mollie Katzen, 1977. Growing up, my sister loved this soup and when she would tell my mother it was essential for her to find some in her life, the house would soon fill with an intoxicating aroma of butter and onions, paprika and mushrooms. In the fall I find myself returning to the warm flavors and comfort of a bowl of the delightful and essential, Hungarian Mushroom Soup.


First, I chop all the mushrooms, and place them aside in a bowl. ( 12 oz. )


I chop the onion, ( 2 cups ) and I saute` with 2 T. butter. Salt lightly.


After a few minutes, add the mushrooms, 1 tsp. of dill, 1/2 cup stock or water, 1 T. Tamari and 1 T. Hungarian Paprika and simmer 15 minutes, covered.


In another saucepan, melt 2 T. butter. Whisk in 3 T. flour and cook, whisking a few minutes.


Add 1 cup of milk, cook, stirring frequently over low heat about 10 minutes until thick.


Stir in mushroom mixture and 1 1/2 cups of stock or water.


Cover and simmer the soup for 10-15 minutes.


Just before serving, add salt, pepper, 2 tsp. fresh lemon juice, and 1/2 cup of sour cream. Garnish with parsley if desired.

When I was little I couldn't say mushroom soup so I called it Mommy Soup. LOL. I definitely saving this to my recipes bookmarks folder! Thank you for sharing.

Thank you for stopping by and sharing! I was brought to a reflection of the cultural organism of mushrooms and kombucha mushrooms in particular, who are mothers to baby scuby mushrooms... I wondered, in the midst of this thought process, are all mushrooms mothers, in this sense? It's a question of biology, I think. I wish I knew more about those things... The reproductive processes of fungi...perhaps Hungarian mushroom soup, is also mommy soup, in this sense. Otherwise, enjoy! lol !
