MEXICAN STREET FOOD - ELOTES
These are one of the favorite Mexican foods of @mama-pepper!
In fact, I've brought some back each of the three times that I have gone to Mexico on this trip. Though "elotes" is the Spanish name for these down in Mexico, they are also commonly called "Corn in a Cup" in English. Elotes is also used as a name for a whole roasted corn on the cob prepared a similar way, but we prefer the cup, which would technically be called an "Elote en Vaso."
BASIC RECIPE
This is another one of those excellent dishes that we have enjoyed while travelling that when we try to reproduce it ourselves, although it is incredibly delicious, it is never quite as good as the original. For those who want to attempt it though, here is the recipe.
Cook corn and then scoop cooked corn into a cup.
Drain off excess liquid.
Repeat process until total number of desired cups has been reached.
Add some mayonnaise to the top of each cup.
Add some chili sauce, hot sauce, or chili powder to the top of each cup.
Add some shredded cotija cheese to the top of each cup, or substitute crumbled feta.
Add a spoon to each cup.
Give the cup a stir and enjoy it!
When these ingredients are added together, it creates a very interesting blend of flavors. Each street vendor uses different amounts, so I'd recommend "making the recipe your own" and seeing what amounts of the ingredients work best for you. Many vendors even offer a super spicy "pica" version of the chili sauce and a regular one as well.
Needless to say, @papa-pepper likes it pica while @mama-pepper prefers the regular variety. Have any of you ever enjoyed this delicious dish?

My favorite is (not sure if it's "street food" but I did buy it off a truck) lengua tacos with tomatillo hot sauce
OMG I ate the same exact thing yesterday. If I took a picture of my three street tacos it would have looked exactly like that. Makes me want more. IT was so delicious.

Ingredients
1/4 cup mayonnaise
1/4 cup sour cream or Mexican crema
1/2 cup finely crumbled cotija or feta cheese, plus more for serving
1/2 teaspoon ancho or guajillo chili powder, plus more for serving
1 medium clove garlic, finely minced (about 1 teaspoon)
1/4 cup finely chopped cilantro leaves and tender stems
4 ears shucked corn
1 lime, cut into wedges
Directions
1.Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover gill and allow to preheat for 5 minutes. Clean and oil the grilling grate.
2.While coals heat, combine mayonnaise, sour cream, cheese, chili powder, garlic, and cilantro in a large bowl. Stir until homogenous and set aside.
3.When grill is hot, place corn directly over hot side of grill and cook, rotating occasionally, until cooked through and charred in spots on all sides, about 8 minutes total.
4.Transfer corn to bowl with cheese mixture and use a large spoon to evenly coat corn on all sides with mixture. Sprinkle with extra cheese and chili powder and serve immediately with lime wedges.
