My Recipe for my local oil rice (MTN Rice)
Greetings my dearest steemians and lovers of food. Today I am sharing with you all a popular local rice recipe, eaten, loved and commonly cooked by people of my State and country at large. Though it's my first post on this community.
I will be sharing my ingredients, the health benefits as well as the recipe used in making this delicious, and low budget rice. In my region this rice is called an "MTN Rice", because of the oil used (mostly red Palm oil) and on the rice it look more like the brand colour of one of our telecom Networks "MTN".
These are the ingredients I used:
- Our Local Rice (sand rice)
- Palm Oil
- Tomatoes
- Cray fish
- Pepper
- Local spices
- Garlic
- Curry leaf
- Onion
- Seasoning cubes and salt to taste
- First of all, I parboiled my local rice thoroughly because it has so much stand and stones but high nutritional benefits.
- Chop my tomatoes (it's optional. If you have other veggies you can add), my onions. Pound my cray fish with garlic. You can skip the garlic if you don't like them in foods.
- Heat your pot on the fire to dry up water in it. On the heated pot, pour in your desired quantity of palm oil and leave it to bleach for a minute.
On the bleached oil pour in your chopped fresh tomato with onion. The reason you are putting them is because you don't want the onion to be over fried while waiting for the tomato to be ready.
When they are all fried to done, pour in your pounded or grinded cray fish with your garlic, your local spice mix with pepper, Seasoning cubes and salt to taste. Stir to incorporate and add some water (enough to soften the parboiled rice).

After the water gets to a boil, pour in your parboiled Rice and stir. Taste and adjust for salt, seasoning cube and cray fish. Then cover and allow it to steamer till the water dries up.
Check if the rice is soft, if not add a little water then add your curry leaf. Stir to combine and take it off from the heat. Garnish it with some sliced tomatoes.
Best served hot with desired protein, cold drink🍸 or water🍶
The local rice is rich in vitamins B1, B3, B6 and folate.

- It give energy, because it contains Carbohydrate.
