NG's Recipes 11 - Fried Vermicelli

So, what it’s a lockdown? All this while I have been making lockdown recipes. But now I feel it’s a negative approach. So, what is it’s a lockdown? Life goes on and food is intrinsic to life. We ll need to eat and we all need to enjoy the goof we eat. So I have decided to take a more positive approach in life and re-brand my food series as “NG’s Recipes” pronounced as “Njeez Recipes”. It stands for my name Neha Gopal.

So today I decided to make another favourite dish of mine. Vermicelli. This is light dish that can double up as a snack or as a light meal. Its great for dinners. Also, since vermicelli is made of Refined flour. It pays to make it healthy. Remember the maxim Tasty and healthy at the same time. So, I add a lot of veggies. One can also add meat or scrambled eggs if it’s part of their diet.

So, let’s get to it. Here are the ingredients.

Ingredients

2 Cups Vermicelli
4 tbsp Cooking Oil/ Ghee (clarified butter)
½ cup carrot finely chopped
½ cup beans finely chopped
1 large potato chopped and microwave cooked for 4 mins.
1 largish onion chopped
¾ cup peas – Microwaved for 3 mins.
10 Cashew Nuts. One can also use Peanuts. Break them into two halves.
100 grams cottage cheese chopped into small pieces.
Grated coconut - Optional
Salt to taste
Red Chilli Powder/Pepper – Optional
Green Chillies – Optional
½ tbs Sugar
Curry Leaves
Turmeric Powder – Optional
Mustard Seeds.
1-inch ginger grated.

The Recipe

Heat pan on HIGH FLAME with 2 tbsp of Oil/Ghee.
Add mustard seeds and wait till they crackle.
Add the ginger, green chilli and curry leaves.
Add cashew nuts / peanuts and fry till they are brown.
Add the onions and fry till they are golden brown.

Add the all veggies one by one. Carrot first after 30 secs add the rest.
Add the red chilli/ pepper and turmeric powder.
Add salt to taste.
Add the sugar.
Fry and mix well for 6 mins till they somewhat cook. Do not overcook.
Add the cottage cheese. Cook for 2 mins.
Set the mixture aside.

Fry the vermicelli in a large bowl with 2 tsp of oil/ghee. Fry until brown.

Add 3 cups of water. You may need to adjust it depending on the quality of vermicelli. Water should be used carefully so that it does not become too wet and sticky.
Cover the pot for a few mins till the vermicelli cooks.
Add the grated coconut to the vermicelli.
Add the vegetable mixture to the vermicelli.

Fry for 3-4 mins and mix well. Don’t over do it else the cottage cheese will become powdered.
Garnish with Dry fruits/Grated coconut/ Coriander leaves/ Tempered curry leaves.

And Voila! Your vermicelli dish is ready.

Side note one can also add non-vegetarian items to the dish if its someone’s diet.
