Being from Pakistan, where people live to eat (we are such foodies!), food is an important part of our culture. We have a variety of dishes from our different provinces and some traditional ones such as Biryani, Pulao, Daal Chawal (lentils & rice), Haleem and Karahi (meat curry, you can say).
As I mentioned, each province of Pakistan has some food speciality too. For instance, Punjab's staple is Sarson ka Saag, Balochistan's is Sajji, NWFP's mainly consists of Afghan cuisine and kebabs etc. Similarly, since I come from Sindh and Sindhi's are huge seafood lovers (we've got the sea!) for today's contest, I have decided to share the recipe of one of our traditional seafood dishes from Sindh (notice the ajrak (traditional Sindhi design) frames? hehe) - the Sindhi Machi Bhatt (fish gravy & rice)!
The dish has two parts (as the name suggests), fish gravy and rice. Let's get into it without further ado!
Ingredients for rice:
- 1 cup rice
- 1/2 kg potatoes
- 1 bunch green coriander
- 1/2 bunch dill leaves (soya)
- Green chilies (as per your spice level)
- 2 cloves garlic
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- Salt (as per taste)
- Oil
Ingredients for fish gravy:
- 1 pound fish
- 1 bunch green coriander
- 1/2 bunch dill leaves (soya)
- Green chilies (as per your spice level)
- 2 cloves garlic
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- Salt (as per your taste)
- Oil
Method for fish gravy:
Step 1: Add oil in a wok and add mustard seeds, dill leaves and sauté.
Step 2: Make a paste of green chilies, green coriander and garlic and add this in the wok.
Step 3: Add turmeric and salt now.
Step 4: Bhoonify the mixture, add fish and add 1/2 cup water. Leave it to cook till the fish is tender.
Method for rice:
Step 1: Follow the same initial steps as the curry, for the rice. In a wok, add: oil, mustard seeds and dill leaves and sauté. After that, add the green chilli, coriander and garlic paste in the mixture and then finally, salt and turmeric.
Step 2: Add potatoes and mix well in the wok with the mixture.
Step 3: Add water to the wok and let the potatoes cook well.
Step 4: Add rice to the mixture and once the water entirely dries, let it steam in low-flame for 5 minutes.
Step 5: Once ready, serve it with the fish gravy.
