Fresh Crab Galore part 2
On this particular day I came across a smaller place selling various seafood dishes. The menu was packed with choices. This is a somewhat rare sighting as many of the seafood places I have been to will have a limited selection of dishes.
This is often down to the restaurant trying to avoid waste as seafood does not keep for very long. Shifting stock throughout the day is very important for a successful food business and this particular restaurant was very strategic in its offering as there many varieties of the same source ingredients. Cooking styles and flavours can transform the very same ingredients into an entirely different plate of food and I often wonder how this happens.
