“Quinchoncho”

The Guandú, Frijol de Palo, Frijolillo, Pea Bean, Palo de Pigeon Peas or Quinchoncho (Cajanus Cajan) is a shrubby legume with alternate trifoliolate leaves, similar to the pea.

It is a very healthy seed to ingest and consumed in Latin American countries such as Colombia, Costa Rica, Ecuador, Panama, Paraguay, Puerto Rico, the Dominican Republic, Venezuela, among others.

Its seeds are used in human food and as fodder for animal feed. They contain between 10 and 17% protein.

It is a grain widely used in Caribbean cuisine in countries such as Colombia, particularly in the Caribbean Region (where soups are made with salty beef ribs, smoked pork, bocachico and in the preparation of sweets at the time of Holy Week), Cuba , Panama, Puerto Rico, Dominican Republic and Venezuela.

In Puerto Rico rice is prepared with pigeon peas; in the Dominican Republic, moro de gandules; and in Panama, arroz con guandu, where it is prepared with coconut, and is a national dish.
