Arroz con Bacalao
Ingredients
- 4 cups of spanish rice
- - / + 8 cups fish broth
- 425 gr of fish cod without skin and diced
- 1/2 Cauliflower, cut into pieces
- 50 grams of peas
- 2 artichokes, remove the front of flower skin until it looks white on the inside, cut into 6 pieces
- 1 green pepper, diced
- 1 onion, diced
- 3 ripe tomatoes, grated
- 2 cloves of garlic, sliced
- 20 gr baked almonds
- A pinch of saffron
- Olive oil
- Black pepper powder to taste
The steps
- Heat a little oil and saute onions until fragrant and add artichokes, peppers and half of garlic, stir-fry for 4 minutes. Add grated tomatoes, sprinkle with salt and cook for 8 minutes.
- Enter the rice for 3 minutes then add fish, cauliflower and peas, sprinkle with salt and cook over medium heat for 18 minutes.
- Pounded the almonds and mix half of the remaining garlic, saffron and a little fish broth, mix well. Pour into rice 5 minutes before cooking. Serve hot.
