STIR-FRY ASPARAGUS AND SHRIMP
Ingredients
- 1.5 pound shrimp, peeled and deveineds
- 1.5 pound asparagus
- 4 tablespoons olive oil
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons minced garlic
- 1 1/2 teaspoons minced ginger
- 3/4 teaspoon crushed red pepper
- 1 1/2 tablespoons low sodium soy sauce
- 2 1/2 tablespoons lemon juice
The steps
- Heat 2 tablespoons of olive oil in a large frying pan over medium-high heat.
- Cook shrimp and season it with 3/4 teaspoon salt and 3/4 teaspoon crushed red pepper. Cook until the shrimp is pink then remove it from the pan and set aside.
- Heat 2 tablespoons of olive oil in the same pan. Add asparagus, ginger and garlic, the season with 3/4 teaspoon of salt. Cook until asparagus becomes tender.
- Add the shrimp back to the pan, then add soy sauce. Stir to mix the ingredients well. Add lemon juice and stir again.
- Serve and Enjoy!
