CREAM OF MUSHROOM SOUP
Ingredients
- 1 1/4 cup of chopped buttom mushroom
- 1 1/4 cup of chopped cremini mushroom
- 1 1/4 cup of chopped shitake mushroom
- 5 cloves of minced garlic.
- 1 1/4 cup of chopped yellow onion
- 2 1/2 tablespoons salted butter
- 1 1/4 teaspoon salt
- 1 1/4 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 5 cups vegetable stock
- 1/3 cup white wine
- 1/2 cup heavy cream
- 2 1/4 tablespoons all-purpose flour
The steps
- Heat a large saucepan over medium-high heat. Add the butter, once melted, add the onion and saute until it softens.
- Add the garlic and stir for 1 minute.
- Add the mushrooms, pepper and salt. Cook until they become golden brown.
- Add the flour and stir well to coat the mushrooms.
- Add the vegetable stocks and stir. Simmer for 15 minutes.
- Add the heavy cream and stir.
- Blend the soup with an immersion blender.
- Serve while hot. Enjoy!
