CREAM OF MUSHROOM SOUP


Ingredients

  • 1 1/4 cup of chopped buttom mushroom
  • 1 1/4 cup of chopped cremini mushroom
  • 1 1/4 cup of chopped shitake mushroom
  • 5 cloves of minced garlic.
  • 1 1/4 cup of chopped yellow onion
  • 2 1/2 tablespoons salted butter
  • 1 1/4 teaspoon salt
  • 1 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 5 cups vegetable stock
  • 1/3 cup white wine
  • 1/2 cup heavy cream
  • 2 1/4 tablespoons all-purpose flour

The steps

  1. Heat a large saucepan over medium-high heat. Add the butter, once melted, add the onion and saute until it softens.
  2. Add the garlic and stir for 1 minute.
  3. Add the mushrooms, pepper and salt. Cook until they become golden brown.
  4. Add the flour and stir well to coat the mushrooms.
  5. Add the vegetable stocks and stir. Simmer for 15 minutes.
  6. Add the heavy cream and stir.
  7. Blend the soup with an immersion blender.
  8. Serve while hot. Enjoy!
